Low Fat Orkney Broonie

175g (6oz) Hamlyns Scottish Oatmeal
175g (6oz) plain flour
175g (6oz) soft brown sugar
275ml (½ pint) warm water
2 tablespoons treacle
1 teaspoon ground ginger
1 teaspoon mixed spice
Pinch of nutmeg
1 level teaspoon bicarbonate of soda
4 teaspoons baking powder
3 tablespoons apple puree

Turn on the oven to 180°C/350°F/gas 4. Oil and line a 2lb (900g) loaf tin. Sift the flour, spices, baking powder and bicarbonate of soda into a bowl, add the oatmeal and mix together. Put the treacle, soft brown sugar, fruit puree and water into a pan and heat, stirring until the sugar has dissolved - do not boil. Pour into the dry ingredients and mix well together. This makes a very wet mixture. Pour into the loaf tin and bake in the middle of the oven for 1 hour 15 minutes or until risen and firm. Test with a skewer inserted into the middle of the loaf - when it comes out clean the loaf is ready. Cool in the tin, then remove from tin and store in an airtight container. Orkney Broonie freezes well.
