Oatmeal Stuffing
A delicious stuffing for roast chicken
50g (2oz) finely chopped chicken livers
50g (2oz) finely chopped onions
50g (2oz) butter or suet
110g (4oz)Hamlyns Scottish Oatmeal, toasted
1tablespoon finely chopped parsley
Pinch of mixed herbs (eg sage and thyme)
Salt and pepper
Fry the chicken livers and butter until soft. Mix in a blender, then add the oatmeal and parsley into the liver and onion puree. Season with mixed herbs, salt and pepper. Cool, and use to stuff your chicken.
Duncan's note: For Christmas, try adding some fresh cranberries and brown sugar to the stuffing. You can also try brushing a chicken with butter and sprinkling it with oatmeal before roasting.
