Swede and Carrot Gratin

Serves 6
4.5 g fibre/ 165 calories per serving

450g (1lb) carrots, roughly chopped
450g (1lb) swede, roughly chopped
25g (1oz) soft vegetable margarine
2 free range eggs
60ml (4 tbsp) skimmed milk
Sea salt & freshly ground black pepper
75g (3oz) Hamlyns Scottish Porridge Oats
50g (2oz) mature cheddar cheese grated

Preheat the oven to 190ºC/ 375ºF/ Gas 5 and lightly oil an oven proof dish.

Steam or boil the swede and carrot until just cooked. Drain if necessary, then mash or liquidise with the margarine, eggs and milk and season to taste with the salt and pepper. Place in the dish. Mix the oats and cheese and sprinkle on top. Bake in the oven for 25 minutes then serve at once, either on its own, or as an accompaniment to any meat dish.
