Onion Tart
Serves 4
4.5 g fibre/ 359 calories per portion
1 Oat Pastry Case, baked blind (recipe in 'Perfect Puddings')
1tbsp vegetable oil
2 large onions, diced
100g (4oz) Quark, or similar low fat cheese
150ml (¼) pint natural yoghurt
2 free range eggs
Sea salt and freshly ground black pepper
Pinch of ground mace
Prepare the Oat Pastry Case.
While the pastry case is baking, heat the oil and gently fry the onions for a few minutes until soft. Beat together the quark, yoghurt and eggs and season with salt and pepper. Place the onions on kitchen paper to drain off any excess fat, then turn them into the pastry case. Pour the yoghurt mixture on the top and return to the oven for 35 minutes until golden brown and set.
