Heather Honey Ice Cream

75g (3oz) Hamlyns Scottish Porridge Oats
50g (2oz) soft brown sugar
250ml (1/2 pint) double cream
45ml (3 tbsp) clear heather honey

Preheat Oven to 180ºC/ 350ºF/ gas 4.

Toast oats in oven for 10-15 minutes until golden brown, cool. Whip cream lightly, fold in sugar and honey then add the oats. Place in freezer. Remove from freezer half hour before serving.

Serve with seasonal soft fruit.
