Danish Apple Pudding
Serves 4-6
110g (4oz) fresh breadcrumbs
110g (4oz) Hamlyns Scottish Porridge Oats
75g (3oz) sugar
50g (2oz) butter
700g (1½ lbs) cooked apples, puréed
150ml (5 fl oz) double cream
2oz (50g) grated chocolate
Mix breadcrumbs, oats, sugar and butter together. Place in a baking tray in a hot oven and cook until crisp, then allow to cool. Layer crumb mixture with apple purée in a glass serving dish, finishing with a layer of crumbs. Spread the whipped cream over the top of the pudding, then sprinkle with chocolate.
Serve cold.
